The Variety

A rarer vanilla altogether.

Vanilla Tahitensis, better known as Tahitian vanilla, is its own species, grown in quantity almost nowhere outside French Polynesia. It ripens fully on the vine and cures plump and oily, with a perfume of ripe fruit, anise and flowers that ordinary vanilla never reaches.

Taha’a grows most of French Polynesia’s vanilla and gives it what nowhere else can: warm trade winds, rich volcanic soil, and generations who treat the vine as a craft. The French call it l’île de la Vanille. One breath of the air explains why.

The Cure

Cured by hand, until it is ready.

Every pod is sweated, sunned and rested until the aroma turns deep and the skin turns supple. How long that takes is up to the weather, not a schedule. There is no oven and no shortcut. Just judgement, and hands that have done this for years.
